Description

A classic sweet potato casserole topped with melted marshmallows.


Ingredients

  • 2 pounds sweet potatoes, peeled and cubed
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil the sweet potato cubes in water until tender, about 15-20 minutes. Drain well.
  3. Mash the sweet potatoes in a large bowl.
  4. Add granulated sugar, melted butter, milk, vanilla extract, cinnamon, and nutmeg to the mashed sweet potatoes. Mix until well combined.
  5. Pour the sweet potato mixture into a greased 8×8 inch baking dish.
  6. Spread the mini marshmallows evenly over the top of the sweet potato mixture.
  7. Bake for 20-25 minutes, or until the marshmallows are golden brown and bubbly.

Notes

  • For a richer flavor, you can substitute half-and-half for the milk.
  • If you prefer a less sweet casserole, reduce the granulated sugar to 1/4 cup.
