Description

A lighter take on classic fried rice with chicken and pineapple.


Ingredients

  • 1 lb chicken breast, diced
  • 1 cup brown rice, cooked
  • 1 cup pineapple chunks
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Cook rice according to package directions.
  2. Sauté onion and bell pepper in sesame oil until softened. Add garlic and cook for 1 minute.
  3. Add chicken and cook until browned.
  4. Stir in cooked rice, pineapple, and soy sauce.
  5. Season with salt and pepper.
  6. Garnish with green onions before serving.
