Description

Chicken breasts baked with Mexican spices and topped with a creamy cheese sauce.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 2 tablespoons chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix chili powder, cumin, garlic powder, salt, and pepper.
  3. Rub spice mixture on both sides of chicken breasts.
  4. Heat olive oil in an oven-safe skillet over medium heat.
  5. Sear chicken breasts for 2-3 minutes per side.
  6. In a separate bowl, combine cheddar cheese, sour cream, and milk.
  7. Pour cheese sauce over chicken breasts in the skillet.
  8. Bake in preheated oven for 20-25 minutes, or until chicken is cooked through and cheese is melted and bubbly.
  9. Garnish with chopped cilantro before serving.

Notes

  • For a spicier dish, add a pinch of cayenne pepper to the spice mixture.
  • You can substitute Monterey Jack or pepper jack cheese for cheddar cheese.
