- 1.5 lbs boneless, skinless chicken thighs, cooked and shredded
- 1 cup sugar-free BBQ sauce
- 1 cup cheddar cheese, shredded
- 1/2 cup red onion, diced
- 1/4 cup cilantro, chopped
- 4 oz cream cheese, softened
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, sugar-free BBQ sauce, softened cream cheese, red onion, and cilantro. Mix well.
- Transfer the mixture to a baking dish.
- Sprinkle cheddar cheese evenly over the top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- You can use pre-cooked rotisserie chicken to save time.
- Adjust the amount of BBQ sauce to your preference.
