Description

Classic muffins with chocolate chips.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt. Stir in chocolate chips.
  3. In a separate bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
  5. Fill muffin liners about 2/3 full.
  6. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For best results, use room temperature ingredients.
  • You can substitute milk mixed with 1 tablespoon of lemon juice or vinegar for the buttermilk.
