Description
Classic muffins with chocolate chips.
Ingredients

- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking soda, and salt. Stir in chocolate chips.
- In a separate bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract.
- Add wet ingredients to dry ingredients and stir until just combined. Do not overmix.
- Fill muffin liners about 2/3 full.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.
Notes
- For best results, use room temperature ingredients.
- You can substitute milk mixed with 1 tablespoon of lemon juice or vinegar for the buttermilk.
- Store in an airtight container at room temperature.
