Description

A zucchini pizza casserole is a simple and tasty dish that combines the flavors of pizza with the nutritional benefits of zucchini.


Ingredients

  • 4 medium zucchini, sliced
  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground beef or Italian sausage over medium heat. Drain excess grease.
  3. Add onion and green bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in crushed tomatoes, tomato sauce, oregano, basil, garlic powder, salt, and pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. In a large bowl, combine zucchini slices with half of the mozzarella cheese and half of the Parmesan cheese.
  6. Pour the meat sauce over the zucchini mixture and stir to combine.
  7. Transfer the mixture to a 9×13 inch baking dish.
  8. Sprinkle the remaining mozzarella cheese and Parmesan cheese over the top.
  9. Bake for 25-30 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
  10. Let stand for 10 minutes before serving.

Notes

  • For a vegetarian option, omit the meat and add more vegetables such as mushrooms, olives, or spinach.
  • You can use different types of cheese, such as provolone or cheddar, depending on your preference.
  • Add a layer of ricotta cheese for a creamier casserole.
