Description

Quick and easy skillet meal with zucchini and chickpeas.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 zucchini, chopped
  • 1 (15-ounce) can chickpeas, drained and rinsed
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Add zucchini and cook until tender, about 5-7 minutes.
  5. Stir in chickpeas, cumin, paprika, salt, and pepper.
  6. Cook for 3 minutes, stirring occasionally.
  7. Garnish with cilantro and serve.
