Description
Quick and easy skillet meal with zucchini and chickpeas.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 zucchini, chopped
- 1 (15-ounce) can chickpeas, drained and rinsed
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped fresh cilantro
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Add zucchini and cook until tender, about 5-7 minutes.
- Stir in chickpeas, cumin, paprika, salt, and pepper.
- Cook for 3 minutes, stirring occasionally.
- Garnish with cilantro and serve.

- Serve over rice or quinoa.
- Add a squeeze of lemon juice for extra flavor.
