Description

Quick and easy Whole30 compliant steak bites with roasted sweet potatoes and bell peppers.


Ingredients

Scale
  • 1.5 lbs sirloin steak, cut into 1-inch cubes
  • 1 large sweet potato, peeled and cubed
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread in a single layer on a baking sheet.
  3. Roast for 20 minutes.
  4. While the sweet potatoes roast, toss the steak bites with the remaining 1 tablespoon of olive oil, salt, and pepper.
  5. Add the chopped bell peppers to the baking sheet with the sweet potatoes.
  6. Add the steak bites to the baking sheet.
  7. Roast for another 10-12 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender.
  8. Serve immediately.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
  • You can substitute other vegetables like broccoli or zucchini.
