Quick and easy Whole30 compliant steak bites with roasted sweet potatoes and bell peppers.
Ingredients

- 1.5 lbs sirloin steak, cut into 1-inch cubes
- 1 large sweet potato, peeled and cubed
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread in a single layer on a baking sheet.
- Roast for 20 minutes.
- While the sweet potatoes roast, toss the steak bites with the remaining 1 tablespoon of olive oil, salt, and pepper.
- Add the chopped bell peppers to the baking sheet with the sweet potatoes.
- Add the steak bites to the baking sheet.
- Roast for another 10-12 minutes, or until the steak is cooked to your desired doneness and the vegetables are tender.
- Serve immediately.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
- You can substitute other vegetables like broccoli or zucchini.
