Ingredients

- 2 lbs chicken thighs, boneless, skinless
- 3 stalks lemongrass, minced
- 4 cloves garlic, minced
- 1 shallot, minced
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tsp ground turmeric
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
Instructions
- In a bowl, combine lemongrass, garlic, shallot, fish sauce, soy sauce, sugar, turmeric, and pepper.
- Add chicken to the marinade and mix well. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
- Heat vegetable oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned and cooked through, about 6-8 minutes per side.
- Serve hot with rice and your favorite Vietnamese sides.
Notes
- For best flavor, marinate the chicken for at least 2 hours.
- Serve with steamed rice and a side of fresh vegetables.
