Description

Hearty and nutritious vegetable soup.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup green beans, cut
  • 1 cup corn kernels
  • 1 cup peas
  • 1/2 cup chopped parsley
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more.
  4. Pour in vegetable broth and diced tomatoes. Bring to a boil.
  5. Add green beans, corn, and peas. Reduce heat and simmer for 15 minutes.
  6. Stir in parsley, salt, and pepper.
  7. Serve hot.

Notes

  • Add other vegetables as desired, such as potatoes, zucchini, or spinach.
  • For a thicker soup, blend a portion of the soup before serving.
