Hearty and nutritious vegetable soup.
Ingredients

- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup green beans, cut
- 1 cup corn kernels
- 1 cup peas
- 1/2 cup chopped parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more.
- Pour in vegetable broth and diced tomatoes. Bring to a boil.
- Add green beans, corn, and peas. Reduce heat and simmer for 15 minutes.
- Stir in parsley, salt, and pepper.
- Serve hot.
Notes
- Add other vegetables as desired, such as potatoes, zucchini, or spinach.
- For a thicker soup, blend a portion of the soup before serving.
