- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup vegan butter, softened
- 3/4 cup granulated sugar
- 1/2 cup packed brown sugar
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened applesauce
- Vegan sprinkles for decorating
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the vegan butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the vanilla extract and applesauce until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
- Decorate with vegan sprinkles as desired.
- Bake for 9-11 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can chill the dough for 30 minutes before baking for thicker cookies.
- Store cooled cookies in an airtight container at room temperature.
