Description

Prepare seasoned vegan black beans quickly and easily.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1/2 cup vegetable broth
  • 1 tablespoon lime juice

Instructions

  1. Heat olive oil in a saucepan over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute, stirring constantly.
  2. Add black beans and vegetable broth. Bring to a simmer and cook for 10 minutes, stirring occasionally, until slightly thickened.
  3. Stir in lime juice. Serve hot.
