Description
Turkey meatballs simmered in a creamy pumpkin and sage sauce.
Ingredients

- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can pumpkin puree
- 1 cup chicken broth
- 1/2 cup heavy cream
- 2 tablespoons chopped fresh sage
- Salt and pepper to taste
Instructions
- In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix until just combined.
- Form the mixture into 1-inch meatballs.
- Heat olive oil in a large skillet over medium heat. Brown the meatballs on all sides. Remove meatballs from skillet and set aside.
- In the same skillet, add onion and garlic. Cook until softened, about 5 minutes.
- Stir in pumpkin puree and chicken broth. Bring to a simmer.
- Reduce heat and simmer for 10 minutes, stirring occasionally.
- Stir in heavy cream and sage. Season with salt and pepper to taste.
- Return meatballs to the skillet and simmer in the sauce for 15-20 minutes, or until cooked through.
- Serve hot.
Notes
- Serve over pasta, rice, or mashed potatoes.
- Garnish with extra sage or Parmesan cheese.
