- 3 cups coconut milk
- 1 ripe mango, diced
- 1 dragon fruit, diced
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
Instructions
- Combine chia seeds and coconut milk in a bowl.
- Stir in maple syrup and vanilla extract.
- Let sit for 5 minutes, then stir again to break up any clumps.
- Cover and refrigerate for at least 2 hours, or overnight.
- Before serving, stir in diced mango and dragon fruit.
- Serve chilled.
