Description

Sweet potatoes filled with taco seasoned ground beef and your favorite toppings.


Ingredients

Scale
  • 2 sweet potatoes
  • 1 pound ground beef
  • 1 ounce taco seasoning
  • 1/2 cup water
  • Toppings: shredded cheese, sour cream, salsa, guacamole

Instructions

  1. Preheat oven to 400°F.
  2. Wash sweet potatoes and pierce several times with a fork.
  3. Bake for 45-60 minutes, or until soft.
  4. While sweet potatoes are baking, brown ground beef in a skillet over medium-high heat.
  5. Drain excess grease.
  6. Stir in taco seasoning and water. Simmer for 5 minutes.
  7. Slice open baked sweet potatoes and fluff the insides with a fork.
  8. Top with taco meat and your favorite toppings.

Notes

  • You can microwave the sweet potatoes for faster cooking.
  • Use any ground meat you like.
