 - 2 cups mashed cooked sweet potatoes
 - 1/2 cup granulated sugar
 - 1/4 cup packed light brown sugar
 - 1/2 teaspoon salt
 - 1 teaspoon ground cinnamon
 - 1/2 teaspoon ground ginger
 - 1/4 teaspoon ground nutmeg
 - 2 large eggs, lightly beaten
 - 1 (12 ounce) can evaporated milk
 - 1 teaspoon vanilla extract
 - 1 unbaked 9-inch pie crust
 
Instructions
- Preheat your oven to 375 degrees F (190 degrees C).
 - In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, salt, cinnamon, ginger, and nutmeg. Mix well.
 - Stir in the beaten eggs, evaporated milk, and vanilla extract until just combined.
 - Pour the filling into the unbaked pie crust.
 - Bake for 50 to 60 minutes, or until a knife inserted near the center comes out clean.
 - Let the pie cool completely on a wire rack before serving.

- For a smoother filling, you can press the mashed sweet potatoes through a sieve before mixing.
 - Ensure your sweet potatoes are fully cooked and mashed before starting.
 - You can add a pinch of cloves for extra spice.
