- 1 lb sweet potatoes, peeled and cubed
- 1 lb green beans, trimmed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp garlic powder
Instructions
- Preheat oven to 400°F.
- In a large bowl, toss sweet potatoes and green beans with olive oil, salt, pepper, and garlic powder.
- Spread vegetables in a single layer on a baking sheet.
- Bake for 25-30 minutes, or until sweet potatoes are tender and slightly caramelized.
- Serve hot.
