A hearty bowl with sweet potato and beef.
Ingredients

- 1 sweet potato, cubed
- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1/2 cup salsa
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Toss sweet potato with olive oil, salt, and pepper. Roast for 20 minutes, or until tender.
- While sweet potato is roasting, cook ground beef in a skillet over medium heat. Drain excess fat.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in black beans, corn, and salsa. Season with salt and pepper.
- Assemble bowls by dividing sweet potato and beef mixture among bowls.
- Garnish with cilantro.
