Description

A hearty bowl with sweet potato and beef.


Ingredients

Scale
  • 1 sweet potato, cubed
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1/2 cup salsa
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potato with olive oil, salt, and pepper. Roast for 20 minutes, or until tender.
  2. While sweet potato is roasting, cook ground beef in a skillet over medium heat. Drain excess fat.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in black beans, corn, and salsa. Season with salt and pepper.
  5. Assemble bowls by dividing sweet potato and beef mixture among bowls.
  6. Garnish with cilantro.
