- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1/4 cup sweet chili sauce
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 cup cooked rice
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup chopped cilantro
- 1/4 cup shredded coconut
- 2 tbsp lime juice
- 2 tbsp coconut milk
Instructions
- In a bowl, combine chicken, sweet chili sauce, soy sauce, rice vinegar, and sesame oil. Marinate for 15 minutes.
- Heat a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
- In a small bowl, whisk together shredded coconut, lime juice, and coconut milk.
- Assemble bowls with rice, carrots, cucumber, and chicken.
- Drizzle with coconut lime sauce and garnish with cilantro.
