  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup granulated sugar (for strawberries)
  • 1 cup heavy cream (for whipped cream)
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract (for whipped cream)

Instructions

  1. Prepare the strawberries by washing, hulling, and slicing them. Combine with 1/4 cup sugar and let sit for 30 minutes.
  2. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper. Mix flour, 1/4 cup sugar, baking powder, and salt in a bowl.
  3. Add cold, cubed butter to the flour mixture and blend until it resembles coarse crumbs.
  4. Pour in heavy cream and vanilla extract, stirring gently until just combined. Knead the dough a few times and pat into a rectangle about 1 inch thick.
  5. Cut out shortcakes and place them on the baking sheet. Bake for 12-15 minutes until lightly golden. Allow to cool slightly.
  6. For the whipped cream, beat 1 cup heavy cream, 2 tablespoons powdered sugar, and 1 teaspoon vanilla extract until soft peaks form.
  7. Assemble the shortcake by slicing each shortcake in half, layering with strawberries and whipped cream, and topping with the other half.
