Description
Classic British dessert cake with dates and toffee sauce.

- 1 cup chopped dates
- 1 teaspoon baking soda
- 1 cup boiling water
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
- In a bowl, combine dates, baking soda, and boiling water. Let stand for 10 minutes.
- In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in the date mixture.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool in the pan for 10 minutes before inverting onto a wire rack to cool completely.

- Serve warm with toffee sauce and a scoop of vanilla ice cream.
