Sriracha Shrimp Mango Avocado Rice

  • For the Shrimp:
  • ½ lb shrimp, peeled & deveined
  • 1 tbsp olive oil
  • 1 tbsp Sriracha
  • 1 tbsp honey
  • 1 tbsp soy sauce
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • Salt & pepper to taste
  • For the Bowl:
  • 2 cups cooked jasmine or brown rice
  • 1 ripe mango, diced
  • 1 avocado, sliced
  • ½ cup shredded carrots
  • ¼ cup chopped cilantro
  • 1 tbsp lime juice
  • 1 tbsp sesame seeds (optional)
  • For the Drizzle (Optional):
  • 2 tbsp Greek yogurt or mayo
  • 1 tsp Sriracha
  • ½ tsp honey

Instructions

  1. In a medium bowl, mix shrimp with olive oil, Sriracha, honey, soy sauce, garlic powder, smoked paprika, salt, and pepper. Let marinate for 5–10 minutes.
  2. Heat a non-stick pan over medium-high heat. Cook shrimp for 2–3 minutes per side until opaque and slightly caramelized. Set aside.
  3. If not already cooked, prepare rice according to package instructions. Fluff with a fork and set aside.
  4. Dice mango, slice avocado, and shred carrots. Drizzle avocado with lime juice to prevent browning and enhance flavor.
  5. In two serving bowls, divide the cooked rice. Top with mango, avocado, shredded carrots, and cooked shrimp. Sprinkle with chopped cilantro and sesame seeds if desired.
  6. For the optional drizzle, mix Greek yogurt or mayo with Sriracha and honey. Drizzle over the bowls before serving.
