Description

A refreshing pasta salad perfect for spring.


Ingredients

Scale
  • 1 pound pasta
  • 1 cup asparagus, chopped
  • 1 cup peas
  • 1/2 cup fresh mint, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions.
  2. Blanch asparagus and peas in boiling water for 2 minutes.
  3. Drain pasta and vegetables and rinse with cold water.
  4. In a large bowl, combine pasta, asparagus, peas, and mint.
  5. In a small bowl, whisk together olive oil and lemon juice.
  6. Pour dressing over pasta salad and toss to combine.
  7. Season with salt and pepper.
  8. Refrigerate for at least 30 minutes before serving.
