A refreshing pasta salad perfect for spring.
Ingredients

- 1 pound pasta
- 1 cup asparagus, chopped
- 1 cup peas
- 1/2 cup fresh mint, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions.
- Blanch asparagus and peas in boiling water for 2 minutes.
- Drain pasta and vegetables and rinse with cold water.
- In a large bowl, combine pasta, asparagus, peas, and mint.
- In a small bowl, whisk together olive oil and lemon juice.
- Pour dressing over pasta salad and toss to combine.
- Season with salt and pepper.
- Refrigerate for at least 30 minutes before serving.
Notes
- Add grilled chicken or shrimp for extra protein.
- Use different types of pasta, such as rotini or farfalle.
