Description

These bars combine speculoos spice with chocolate and cherries for a festive treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 teaspoons speculoos spice
  • 1 cup chopped dark chocolate
  • 1 cup dried cherries, chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract. Stir in speculoos spice.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in chopped chocolate and cherries.
  6. Press the mixture evenly into the prepared baking pan.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let cool completely in the pan before cutting into bars.

Notes

  • For best results, use high-quality dark chocolate.
  • You can substitute fresh cherries for dried, if desired.
