These bars combine speculoos spice with chocolate and cherries for a festive treat.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 teaspoons speculoos spice
- 1 cup chopped dark chocolate
- 1 cup dried cherries, chopped
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract. Stir in speculoos spice.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in chopped chocolate and cherries.
- Press the mixture evenly into the prepared baking pan.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let cool completely in the pan before cutting into bars.
Notes
- For best results, use high-quality dark chocolate.
- You can substitute fresh cherries for dried, if desired.
- Store in an airtight container at room temperature.
