A baked casserole with spaghetti squash and cheese.

- 1 spaghetti squash, halved and seeded
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup grated Gruyere cheese
Instructions
- Preheat oven to 400°F (200°C).
- Place squash halves cut-side up on a baking sheet. Drizzle with olive oil, salt, and pepper.
- Bake for 45-60 minutes, or until squash is tender.
- Let cool slightly, then shred the squash with a fork.
- In a bowl, combine shredded squash, heavy cream, Parmesan cheese, and Gruyere cheese.
- Pour mixture into a baking dish.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let stand for 5-10 minutes before serving.
Notes
- You can add other cheeses, such as cheddar or mozzarella.
- For a richer flavor, use whole milk instead of heavy cream.
