  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Oil for frying
  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup unsalted butter
  • Salt and pepper to taste
  • Optional: Chives or parsley for garnish

Instructions

  1. Marinate the chicken in buttermilk for at least one hour, preferably overnight.
  2. Prepare the coating by mixing flour, paprika, garlic powder, onion powder, salt, and black pepper in a bowl.
  3. Heat oil in a skillet over medium-high heat.
  4. Dredge marinated chicken in the seasoned flour and fry for 12-15 minutes on each side until golden brown and cooked through.
  5. Boil cubed potatoes in salted water until tender, about 15-20 minutes.
  6. Drain potatoes, then mash with milk, butter, salt, and pepper until creamy.
  7. Serve mashed potatoes topped with fried chicken and garnish with chives or parsley.
