Ingredients

- 1 cup all-purpose flour
- 1 cup sourdough starter, unfed
- 4 tablespoons cold unsalted butter, cubed
- 4 ounces sharp cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/4 teaspoon paprika
- 2 tablespoons cold water, if needed
Instructions
- In a food processor, combine flour, sourdough starter, butter, cheddar cheese, salt, and paprika. Pulse until the mixture resembles coarse crumbs.
- If the dough is too dry, add cold water, one tablespoon at a time, until it comes together.
- Turn the dough out onto a lightly floured surface and knead briefly to form a smooth ball.
- Wrap the dough in plastic wrap and chill for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Roll out the dough very thinly on a lightly floured surface.
- Cut into small squares using a knife or a pastry cutter.
- Place the squares on a baking sheet lined with parchment paper.
- Use a toothpick or skewer to poke a hole in the center of each square.
- Bake for 12-15 minutes, or until golden brown and crisp.
- Let cool completely on the baking sheet before serving.
Notes
- For a stronger cheddar flavor, use extra sharp cheddar cheese.
- Store in an airtight container at room temperature.
