Description

This casserole combines chicken, bell peppers, onions, and cheese for a simple weeknight meal.


Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup salsa
  • 12 flour tortillas, cut into pieces

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, bell pepper, onion, and fajita seasoning.
  3. Stir in cheddar cheese and salsa.
  4. Place tortilla pieces in the bottom of a baking dish.
  5. Pour chicken mixture over tortillas.
  6. Bake for 20 minutes, or until heated through.
