Description
This casserole combines chicken, bell peppers, onions, and cheese for a simple weeknight meal.

- 1 pound chicken breast, cooked and shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 packet fajita seasoning
- 1 cup shredded cheddar cheese
- 1 cup salsa
- 12 flour tortillas, cut into pieces
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, bell pepper, onion, and fajita seasoning.
- Stir in cheddar cheese and salsa.
- Place tortilla pieces in the bottom of a baking dish.
- Pour chicken mixture over tortillas.
- Bake for 20 minutes, or until heated through.
