Ingredients

- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 12 small corn tortillas
- 4 slices cheddar cheese, quartered
- 1/2 cup shredded lettuce
- 1/4 cup diced tomatoes
- 1/4 cup ketchup
- 1/4 cup mustard
Instructions
- Shape ground beef into 24 small balls.
- Heat a large skillet over medium-high heat.
- Place 4 balls in the skillet and smash thin with a spatula.
- Season with salt and pepper.
- Cook for 2-3 minutes per side, until browned.
- Place 4 cheese quarters on each burger while cooking.
- Warm tortillas in a separate pan or microwave.
- Place each burger on a tortilla.
- Top with lettuce, tomatoes, ketchup, and mustard.
- Serve immediately.
Notes
- For extra flavor, add diced onions to the burgers while cooking.
- You can use different types of cheese, such as pepper jack or Monterey Jack.
