- 4 boneless, skinless chicken breasts
- 1 can (15 ounces) corn, drained
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup chopped cilantro
- 1 lime, juiced
- 1/4 teaspoon chili powder
- 1/4 cup crumbled cotija cheese
Instructions
- Place chicken breasts in the slow cooker.
- In a bowl, mix corn, mayonnaise, sour cream, cilantro, lime juice, and chili powder.
- Pour mixture over chicken.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Shred chicken with two forks.
- Stir in cotija cheese.
- Serve warm.
