Easy and flavorful chicken and rice cooked in a slow cooker.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 lemon, sliced
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup long-grain rice
- 2 cups chicken broth
Instructions
- Place chicken breasts in the slow cooker.
- Top with lemon slices, rosemary, and thyme.
- Season with salt and pepper.
- Add rice and chicken broth.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
- Remove chicken and shred with two forks.
- Return shredded chicken to the slow cooker and stir to combine.
- Serve hot.
Notes
- For extra flavor, brown the chicken in a skillet before adding it to the slow cooker.
- You can use other herbs, such as oregano or parsley.
- Serve with a side of vegetables.
