Description

Easy and flavorful chicken and rice cooked in a slow cooker.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 lemon, sliced
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup long-grain rice
  • 2 cups chicken broth

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Top with lemon slices, rosemary, and thyme.
  3. Season with salt and pepper.
  4. Add rice and chicken broth.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and rice is tender.
  6. Remove chicken and shred with two forks.
  7. Return shredded chicken to the slow cooker and stir to combine.
  8. Serve hot.

Notes

  • For extra flavor, brown the chicken in a skillet before adding it to the slow cooker.
  • You can use other herbs, such as oregano or parsley.
