Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 1.5 lbs Yukon gold potatoes, cut into 1-inch cubes
- 4 cloves garlic, minced
- 1/2 cup butter, melted
- 1/4 cup beef broth
- 2 tablespoons olive oil
- 1 tablespoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- In a large bowl, combine beef cubes, potatoes, garlic, melted butter, beef broth, olive oil, parsley, salt, and pepper.
- Transfer the mixture to a slow cooker.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
- Serve hot.
Notes
- For extra flavor, sear the beef cubes in a skillet before adding them to the slow cooker.
- You can add other vegetables, such as carrots or onions, to the slow cooker.
- Garnish with fresh parsley before serving.
