Description

Tender beef bites and potatoes cooked in a flavorful garlic butter sauce using a slow cooker.


Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1.5 lbs Yukon gold potatoes, cut into 1-inch cubes
  • 4 cloves garlic, minced
  • 1/2 cup butter, melted
  • 1/4 cup beef broth
  • 2 tablespoons olive oil
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large bowl, combine beef cubes, potatoes, garlic, melted butter, beef broth, olive oil, parsley, salt, and pepper.
  2. Transfer the mixture to a slow cooker.
  3. Cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
  4. Serve hot.

Notes

  • For extra flavor, sear the beef cubes in a skillet before adding them to the slow cooker.
  • You can add other vegetables, such as carrots or onions, to the slow cooker.
