Ingredients

- 2 pounds beef stew meat, cut into 1-inch cubes
- 2 pounds Yukon gold potatoes, peeled and cubed
- 1/2 cup beef broth
- 1/2 cup butter, melted
- 6 cloves garlic, minced
- 1 tablespoon dried parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place the beef cubes and potatoes in the slow cooker.
- In a bowl, whisk together the beef broth, melted butter, minced garlic, parsley, thyme, salt, and pepper.
- Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- Serve hot.
Notes
- For extra flavor, sear the beef cubes in a skillet before adding them to the slow cooker.
- You can add other vegetables, such as carrots or onions, to the slow cooker along with the potatoes.
- Garnish with fresh parsley before serving.
