Description

Tender beef bites and potatoes cooked in a flavorful garlic butter sauce using a slow cooker.


Ingredients

  • 2 pounds beef stew meat, cut into 1-inch cubes
  • 2 pounds Yukon gold potatoes, peeled and cubed
  • 1/2 cup beef broth
  • 1/2 cup butter, melted
  • 6 cloves garlic, minced
  • 1 tablespoon dried parsley
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place the beef cubes and potatoes in the slow cooker.
  2. In a bowl, whisk together the beef broth, melted butter, minced garlic, parsley, thyme, salt, and pepper.
  3. Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  4. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  5. Serve hot.
