Description
A simple pot roast with French onion soup flavor, cooked in a slow cooker.
Ingredients

- 3 lb beef chuck roast
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 2 large onions, sliced
- 4 cloves garlic, minced
- 1 (10.75 oz) can condensed French onion soup
- 1 cup beef broth
- 2 tbsp Worcestershire sauce
- 2 sprigs fresh thyme
Instructions
- Season the chuck roast with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned.
- Transfer the roast to a slow cooker.
- Add sliced onions and minced garlic to the skillet and cook until softened, about 5 minutes.
- Pour the French onion soup and beef broth over the onions in the skillet, scraping up any browned bits from the bottom. Stir in Worcestershire sauce.
- Pour the onion mixture over the roast in the slow cooker. Add thyme sprigs.
- Cover and cook on low for 8-10 hours, or on high for 4-5 hours, or until the roast is tender.
- Remove the thyme sprigs before serving. Shred the roast with two forks and serve with the cooking juices.
Notes
- Serve over mashed potatoes or egg noodles.
- Add carrots and potatoes to the slow cooker during the last 2-3 hours of cooking time.
