Slow Cooker French Onion Pot Roast

Description

A simple pot roast with French onion soup flavor, cooked in a slow cooker.


Ingredients

  • 3 lb beef chuck roast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 1 (10.75 oz) can condensed French onion soup
  • 1 cup beef broth
  • 2 tbsp Worcestershire sauce
  • 2 sprigs fresh thyme

Instructions

  1. Season the chuck roast with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned.
  3. Transfer the roast to a slow cooker.
  4. Add sliced onions and minced garlic to the skillet and cook until softened, about 5 minutes.
  5. Pour the French onion soup and beef broth over the onions in the skillet, scraping up any browned bits from the bottom. Stir in Worcestershire sauce.
  6. Pour the onion mixture over the roast in the slow cooker. Add thyme sprigs.
  7. Cover and cook on low for 8-10 hours, or on high for 4-5 hours, or until the roast is tender.
  8. Remove the thyme sprigs before serving. Shred the roast with two forks and serve with the cooking juices.

Notes

  • Serve over mashed potatoes or egg noodles.
  • Add carrots and potatoes to the slow cooker during the last 2-3 hours of cooking time.
