Description
Hearty potato casserole cooked in a slow cooker.
Ingredients

- 5 medium potatoes, peeled and cubed
- 1 pound ground beef, cooked and drained
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place potatoes, ground beef, onion, and green bell pepper in a slow cooker.
- In a bowl, mix together cream of mushroom soup, diced tomatoes and green chilies, salt, and pepper. Pour over the potato mixture.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are tender.
- Sprinkle with cheddar cheese during the last 30 minutes of cooking.
- Serve hot.
Notes
- You can add other vegetables such as corn or beans.
- For a spicier dish, use hot diced tomatoes and green chilies.
