Description

Hearty potato casserole cooked in a slow cooker.


Ingredients

Scale
  • 5 medium potatoes, peeled and cubed
  • 1 pound ground beef, cooked and drained
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place potatoes, ground beef, onion, and green bell pepper in a slow cooker.
  2. In a bowl, mix together cream of mushroom soup, diced tomatoes and green chilies, salt, and pepper. Pour over the potato mixture.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are tender.
  4. Sprinkle with cheddar cheese during the last 30 minutes of cooking.
  5. Serve hot.

Notes

  • You can add other vegetables such as corn or beans.
  • For a spicier dish, use hot diced tomatoes and green chilies.
