Description

One-pan chicken thighs with broccoli cheddar orzo.


Ingredients

Scale
  • 4 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken thighs for 5-7 minutes per side, until cooked through. Remove chicken from skillet and set aside.
  4. Add orzo and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer for 10 minutes, or until orzo is cooked.
  5. Stir in broccoli florets and cheddar cheese. Cook until broccoli is tender and cheese is melted.
  6. Return chicken thighs to the skillet. Heat through.
  7. Serve immediately.
