Description
One-pan chicken thighs with broccoli cheddar orzo.
Ingredients

- 4 boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken thighs for 5-7 minutes per side, until cooked through. Remove chicken from skillet and set aside.
- Add orzo and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer for 10 minutes, or until orzo is cooked.
- Stir in broccoli florets and cheddar cheese. Cook until broccoli is tender and cheese is melted.
- Return chicken thighs to the skillet. Heat through.
- Serve immediately.
Notes
- You can substitute other vegetables for broccoli.
- Use any cheese you like.
