Ingredients

- 1 pound shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Cooked rice, for serving
Instructions
- In a bowl, combine shrimp, red onion, cilantro, lime juice, and olive oil. Season with salt and pepper.
- Cook shrimp in a skillet over medium heat until pink and cooked through, about 5-7 minutes.
- Prepare rice according to package directions.
- Divide rice into bowls. Top with cooked shrimp and diced avocado.
- Serve immediately.
Notes
- Add a pinch of red pepper flakes for heat.
- Use your favorite toppings, such as salsa or sour cream.
