Description

Quick and easy shrimp and avocado bowls.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 ripe avocados, diced
  • 1/2 cup red onion, thinly sliced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a bowl, combine shrimp, red onion, cilantro, lime juice, and olive oil. Season with salt and pepper.
  2. Cook shrimp in a skillet over medium heat until pink and cooked through, about 5-7 minutes.
  3. Prepare rice according to package directions.
  4. Divide rice into bowls. Top with cooked shrimp and diced avocado.
  5. Serve immediately.
