Description

Classic shepherd’s pie with a rich meat filling and mashed potato topping.

Ingredients

Scale
  • 1 lb ground lamb
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp dried thyme
  • 2 lbs potatoes, peeled and quartered
  • 4 tbsp butter
  • 1/2 cup milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground lamb over medium-high heat. Drain excess fat.
  3. Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
  4. Stir in beef broth, tomato paste, Worcestershire sauce, and thyme. Bring to a simmer and cook for 10 minutes. Season with salt and pepper.
  5. Meanwhile, boil potatoes until tender. Drain and mash with butter and milk. Season with salt and pepper.
  6. Pour meat mixture into a baking dish. Spread mashed potatoes evenly over the top.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Let stand for 10 minutes before serving.

Notes

  • For a richer flavor, use lamb broth instead of beef broth.
  • Add peas or corn to the meat mixture for extra vegetables.
  • Top with shredded cheese before baking for a cheesy shepherd’s pie.
