Description
Classic shepherd’s pie with a rich meat filling and mashed potato topping.
Ingredients

- 1 lb ground lamb
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 tsp dried thyme
- 2 lbs potatoes, peeled and quartered
- 4 tbsp butter
- 1/2 cup milk
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, brown ground lamb over medium-high heat. Drain excess fat.
- Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
- Stir in beef broth, tomato paste, Worcestershire sauce, and thyme. Bring to a simmer and cook for 10 minutes. Season with salt and pepper.
- Meanwhile, boil potatoes until tender. Drain and mash with butter and milk. Season with salt and pepper.
- Pour meat mixture into a baking dish. Spread mashed potatoes evenly over the top.
- Bake for 20-25 minutes, or until golden brown.
- Let stand for 10 minutes before serving.
Notes
- For a richer flavor, use lamb broth instead of beef broth.
- Add peas or corn to the meat mixture for extra vegetables.
- Top with shredded cheese before baking for a cheesy shepherd’s pie.
