Description

A hearty casserole version of shepherd’s pie.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, chopped
  • 1 cup frozen peas
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tsp dried thyme
  • 4 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
  3. Add onion and carrots to the skillet and cook until softened, about 5 minutes.
  4. Stir in peas, diced tomatoes, and thyme. Simmer for 10 minutes.
  5. Transfer the mixture to a 9×13 inch baking dish.
  6. Spread mashed potatoes evenly over the meat mixture.
  7. Sprinkle with cheddar cheese.
  8. Bake for 20-25 minutes, or until golden brown and bubbly.
  9. Let stand for 5 minutes before serving.

Notes

  • For a richer flavor, use beef broth instead of water when simmering the meat mixture.
  • You can substitute ground lamb for ground beef.
  • Add a layer of corn for extra vegetables.
