Description
A hearty casserole version of shepherd’s pie.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, chopped
- 1 cup frozen peas
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 tsp dried thyme
- 4 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef in a large skillet over medium-high heat. Drain excess grease.
- Add onion and carrots to the skillet and cook until softened, about 5 minutes.
- Stir in peas, diced tomatoes, and thyme. Simmer for 10 minutes.
- Transfer the mixture to a 9×13 inch baking dish.
- Spread mashed potatoes evenly over the meat mixture.
- Sprinkle with cheddar cheese.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let stand for 5 minutes before serving.
Notes
- For a richer flavor, use beef broth instead of water when simmering the meat mixture.
- You can substitute ground lamb for ground beef.
- Add a layer of corn for extra vegetables.
