Easy sheet pan meal with buffalo chicken and sweet potatoes.
Ingredients

- 1.5 lbs sweet potatoes, peeled and cubed
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 cup buffalo wing sauce
- 2 tbsp butter, melted
- 1/4 cup crumbled blue cheese, for topping
- 2 green onions, sliced, for topping
Instructions
- Preheat oven to 400°F.
- Toss sweet potatoes with olive oil, salt, and pepper on a sheet pan.
- Bake for 15 minutes.
- In a bowl, combine chicken, buffalo wing sauce, and melted butter.
- Add chicken to the sheet pan with sweet potatoes.
- Bake for 15-20 minutes, or until chicken is cooked through.
- Top with blue cheese and green onions.

- Adjust buffalo sauce to your spice preference.
- Serve with ranch or blue cheese dressing.
