Easy sheet pan meal with buffalo chicken and sweet potatoes.


Ingredients

  • 1.5 lbs sweet potatoes, peeled and cubed
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup buffalo wing sauce
  • 2 tbsp butter, melted
  • 1/4 cup crumbled blue cheese, for topping
  • 2 green onions, sliced, for topping

Instructions

  1. Preheat oven to 400°F.
  2. Toss sweet potatoes with olive oil, salt, and pepper on a sheet pan.
  3. Bake for 15 minutes.
  4. In a bowl, combine chicken, buffalo wing sauce, and melted butter.
  5. Add chicken to the sheet pan with sweet potatoes.
  6. Bake for 15-20 minutes, or until chicken is cooked through.
  7. Top with blue cheese and green onions.
