Description

A hearty and comforting soup made with sausage, potatoes, and vegetables.


Ingredients

Scale
  • 1 lb smoked sausage, sliced
  • 1 tbsp olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 2 lbs potatoes, peeled and cubed
  • 1 cup milk
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. In a large pot or Dutch oven, cook the sliced sausage over medium heat until browned. Remove sausage with a slotted spoon and set aside.
  2. Add olive oil to the pot. Add the chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Pour in the chicken broth and bring to a simmer.
  4. Add the cubed potatoes and the cooked sausage to the pot.
  5. Bring the soup back to a simmer, then reduce heat and cook until potatoes are tender, about 15-20 minutes.
  6. Stir in the milk and heavy cream. Heat through but do not boil.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh parsley before serving.

Notes

  • For a thicker soup, you can mash some of the potatoes against the side of the pot.
  • You can substitute Italian sausage or chorizo for smoked sausage.
  • Add other vegetables like peas or corn if desired.
