Chicken with Southwestern flavors.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt and pepper to taste
- Shredded cheddar cheese, for topping
- Sour cream, for topping
- Chopped cilantro, for topping
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken breasts and cook until browned on both sides and cooked through. Remove from skillet and set aside.
- Add onion and red bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in black beans, corn, diced tomatoes and green chilies, chili powder, cumin, and garlic powder. Season with salt and pepper to taste.
- Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Return chicken breasts to the skillet and spoon sauce over the top.
- Top with shredded cheddar cheese and cook until cheese is melted.
- Serve with sour cream and chopped cilantro.
Notes
- Adjust the amount of chili powder to your preference.
- Serve over rice or with tortilla chips.
