Description

Chicken with Southwestern flavors.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Shredded cheddar cheese, for topping
  • Sour cream, for topping
  • Chopped cilantro, for topping

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken breasts and cook until browned on both sides and cooked through. Remove from skillet and set aside.
  3. Add onion and red bell pepper to the skillet and cook until softened, about 5 minutes.
  4. Stir in black beans, corn, diced tomatoes and green chilies, chili powder, cumin, and garlic powder. Season with salt and pepper to taste.
  5. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  6. Return chicken breasts to the skillet and spoon sauce over the top.
  7. Top with shredded cheddar cheese and cook until cheese is melted.
  8. Serve with sour cream and chopped cilantro.

  • Adjust the amount of chili powder to your preference.
  • Serve over rice or with tortilla chips.
