Description

Roasted cabbage wedges served with a spicy Greek feta cheese dip.


Ingredients

  • 1 medium head of green cabbage, cut into wedges
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces feta cheese
  • 2 tablespoons Greek yogurt
  • 1 tablespoon olive oil
  • 12 teaspoons red pepper flakes, or to taste
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the cabbage into wedges, leaving the core intact.
  3. Toss cabbage wedges with olive oil, salt, and pepper.
  4. Arrange cabbage in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, or until tender and browned.
  6. While cabbage is roasting, prepare the tirokafteri.
  7. In a food processor, combine feta cheese, Greek yogurt, olive oil, red pepper flakes, and lemon juice.
  8. Process until smooth and creamy. Adjust red pepper flakes to your spice preference.
  9. Serve roasted cabbage wedges warm with tirokafteri for dipping.
