Description
Roasted cabbage wedges served with a spicy Greek feta cheese dip.
Ingredients

- 1 medium head of green cabbage, cut into wedges
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 ounces feta cheese
- 2 tablespoons Greek yogurt
- 1 tablespoon olive oil
- 1–2 teaspoons red pepper flakes, or to taste
- 1 tablespoon lemon juice
Instructions
- Preheat oven to 400°F (200°C).
- Cut the cabbage into wedges, leaving the core intact.
- Toss cabbage wedges with olive oil, salt, and pepper.
- Arrange cabbage in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and browned.
- While cabbage is roasting, prepare the tirokafteri.
- In a food processor, combine feta cheese, Greek yogurt, olive oil, red pepper flakes, and lemon juice.
- Process until smooth and creamy. Adjust red pepper flakes to your spice preference.
- Serve roasted cabbage wedges warm with tirokafteri for dipping.
Notes
- Adjust the amount of red pepper flakes in the tirokafteri to suit your spice preference.
- For extra flavor, sprinkle the cabbage wedges with garlic powder before roasting.
