Description

Simple Mexican rice prepared in a rice cooker with Rotel tomatoes.


Ingredients

  • 1 cup long-grain rice
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1/2 cup chicken broth
  • 1/4 cup water
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt to taste

Instructions

  1. Rinse the rice in a fine-mesh sieve until the water runs clear.
  2. Add the rinsed rice, Rotel, chicken broth, water, vegetable oil, chili powder, cumin, garlic powder, and salt to the rice cooker.
  3. Stir to combine.
  4. Close the lid and cook according to your rice cooker’s instructions for white rice.
  5. Once the rice is cooked, let it sit for 10 minutes, then fluff with a fork.
  6. Serve warm.

Notes

  • Adjust the amount of chili powder to your preference.
  • For a spicier dish, use hot Rotel tomatoes.
