Description
Simple Mexican rice prepared in a rice cooker with Rotel tomatoes.
Ingredients

- 1 cup long-grain rice
- 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
- 1/2 cup chicken broth
- 1/4 cup water
- 1 tablespoon vegetable oil
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- Salt to taste
Instructions
- Rinse the rice in a fine-mesh sieve until the water runs clear.
- Add the rinsed rice, Rotel, chicken broth, water, vegetable oil, chili powder, cumin, garlic powder, and salt to the rice cooker.
- Stir to combine.
- Close the lid and cook according to your rice cooker’s instructions for white rice.
- Once the rice is cooked, let it sit for 10 minutes, then fluff with a fork.
- Serve warm.
Notes
- Adjust the amount of chili powder to your preference.
- For a spicier dish, use hot Rotel tomatoes.
- Garnish with fresh cilantro, if desired.
