Description

Ingredients

  • 1 cup long-grain rice
  • 2 tablespoons vegetable oil
  • 1/2 white onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 cups chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 cup chopped cilantro

Instructions

  1. Rinse the rice in a fine-mesh sieve until the water runs clear.
  2. Heat the oil in a medium saucepan over medium heat. Add the rice and cook, stirring constantly, until golden brown.
  3. Add the onion and garlic and cook until softened.
  4. Stir in the diced tomatoes, chicken broth, chili powder, cumin, and salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff with a fork and stir in the cilantro.
