- 1 cup long-grain rice
- 2 tablespoons vegetable oil
- 1/2 white onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 2 cups chicken broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 cup chopped cilantro
Instructions
- Rinse the rice in a fine-mesh sieve until the water runs clear.
- Heat the oil in a medium saucepan over medium heat. Add the rice and cook, stirring constantly, until golden brown.
- Add the onion and garlic and cook until softened.
- Stir in the diced tomatoes, chicken broth, chili powder, cumin, and salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff with a fork and stir in the cilantro.
Notes
- For a richer flavor, use chicken broth instead of water.
- Adjust the amount of chili powder to your preference.
