Instructions
- In a medium bowl, combine pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, and vanilla extract. Mix until smooth.
- Chill the mixture in the refrigerator for at least 30 minutes, or until firm enough to roll.
- Roll the pumpkin mixture into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
- Melt the white chocolate chips and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
- Dip each pumpkin ball into the melted white chocolate, ensuring it is fully coated.
- Place the coated truffles back on the parchment-lined baking sheet.
- Chill the truffles in the refrigerator for at least 1 hour, or until the chocolate has set.
