  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • For the Glaze:
  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the pumpkin puree, egg, vanilla extract, and milk.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Turn the dough out onto a lightly floured surface and gently pat it into a 3/4-inch thick round.
  7. Cut the round into 8 wedges. Place the wedges on the prepared baking sheet.
  8. Bake for 15-18 minutes, or until golden brown. Let cool on a wire rack.
  9. For the glaze, whisk together the powdered sugar, 2 tablespoons of milk, and vanilla extract until smooth. Add more milk if needed to reach desired consistency.
  10. Drizzle the glaze over the cooled scones.

  • For a stronger pumpkin flavor, you can use pumpkin pie spice instead of individual spices.
