- 1 loaf (1 pound) stale bread, cut into 1-inch cubes
- 2 cups pumpkin puree
- 1 1/2 cups milk
- 3 large eggs, lightly beaten
- 3/4 cup granulated sugar
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/2 cup chopped pecans (optional)
- Whipped cream or ice cream for serving (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Spread the bread cubes evenly in the prepared baking dish.
- In a large bowl, whisk together the pumpkin puree, milk, eggs, granulated sugar, pumpkin pie spice, vanilla extract, and salt until well combined.
- Pour the pumpkin mixture evenly over the bread cubes, pressing down gently to ensure all pieces are moistened.
- If using, sprinkle the chopped pecans over the top.
- Bake for 45-55 minutes, or until the pudding is set and a knife inserted near the center comes out clean.
- Let it cool slightly before serving. Serve warm with whipped cream or ice cream, if desired.
Notes
- Using slightly stale bread will give you the best texture.
- You can make this ahead of time and reheat it before serving.
