Description

A creamy and comforting potato soup.


Ingredients

Scale
  • 6 medium potatoes, peeled and cubed
  • 4 cups chicken broth
  • 1 cup milk
  • 1/2 cup butter
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped green onions, for garnish

Instructions

  1. Place potatoes and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  2. In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth and thickened.
  3. Pour milk mixture into the pot with the potatoes. Stir in salt and pepper.
  4. Simmer for 5 minutes, stirring occasionally.
  5. Garnish with green onions before serving.

Notes

  • For a thicker soup, mash some of the potatoes before adding the milk mixture.
  • Add cheese for extra flavor.
