Ingredients

- 6 medium potatoes, peeled and cubed
- 4 cups chicken broth
- 1 cup milk
- 1/2 cup butter
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped green onions, for garnish
Instructions
- Place potatoes and chicken broth in a large pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- In a separate saucepan, melt butter over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth and thickened.
- Pour milk mixture into the pot with the potatoes. Stir in salt and pepper.
- Simmer for 5 minutes, stirring occasionally.
- Garnish with green onions before serving.
Notes
- For a thicker soup, mash some of the potatoes before adding the milk mixture.
- Add cheese for extra flavor.
